Start by lining a plate or tray with paper towels. Place your pickle slices on it and give them a quick pat-down with another paper towel to absorb excess moisture.
Crack your egg into a small bowl and whisk it up. This will help your breadcrumbs stick and give your pickle chips that nice golden color.
In a separate bowl, combine the breadcrumbs and grated parmesan. Stir them together so they’re all evenly mixed.
Now, dip each pickle slice into the egg mixture, making sure it's coated well, then into the breadcrumb-parmesan mix.
Lay the coated pickle chips in a single layer in your air fryer basket. If they’re crowded, they won’t get that perfect crispness, so make sure they have a little space to breathe.
Set your air fryer to 400°F and cook for 10 minutes. Halfway through, give the basket a shake to make sure they cook evenly. After 10 minutes, your pickle chips should be golden and crispy!
