Line an 8×8-inch baking pan with parchment paper or foil, leaving some overhang so you can lift the fudge out later. Set aside.
Microwave the bacon according to the package, crumble it into pieces, and set aside.
In a medium saucepan over low heat, melt the butter. Add the sweetened condensed milk and maple syrup, stirring to combine. Don’t bring it to a high boil—let it slowly thicken while stirring constantly. A few bubbles are okay, just make sure to scrape the bottom.
Using a candy thermometer, heat the mixture to 237°F. Slowly add the powdered sugar, stirring after each addition until fully combined.
Stir in half of the chopped bacon, the salt, and vanilla extract.
Pour the mixture into the prepared pan and flatten evenly.
Sprinkle the remaining bacon on top and lightly press it into the fudge.
Refrigerate for 2 hours until set. Slice and enjoy!
