This Chinese Chicken Pasta Salad is a fresh and flavorful cold pasta dish made with tender shredded chicken, crunchy vegetables, and rotini pasta tossed in a creamy sesame soy dressing. A great for make-ahead meals, this pasta salad is ideal for lunches, picnics, cookouts, and quick family dinners.
To a large bowl add the cooked chicken, snow peas, carrots, bell peppers, cooked noodles, Napa cabbage, water chestnuts, chow mein noodles and scallions, toss gently until mixed together.
To a medium size bowl add the soy sauce, mayonnaise, yogurt, ground ginger and pepper. Stir to combine.
Add the dressing to the large bowl and toss again until everything is evenly coated. Sprinkle with sesame seeds.
Place in the refrigerator for 30 minutes to let the flavors mend together. Serve and enjoy.
