Ingredients

For Salad

  • lbs Yukon Gold or red potatoes peeled and cut into bite-size chunks
  • 3 large eggs

for the Dressing

  • 1 cup mayonnaise
  • 2 tablespoons yellow mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup celery finely diced
  • ¼ cup onion finely diced

Instructions

  • Place the potatoes in a large pot and cover with cold water.
  • Bring to a boil and cook until fork-tender, about 10–12 minutes.
  • Drain and allow the potatoes to cool slightly.
  • Hard-boil the eggs, then peel and chop them.
  • In a large bowl, whisk together the mayonnaise, mustard, apple cider vinegar, sugar, salt, and black pepper.
  • Fold in the potatoes, eggs, celery, and onion until everything is evenly coated.
  • Cover and chill for at least 1 hour before serving.
