Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 5–6 minutes, turning halfway. until golden brown on all sides. Remove the chicken from the skillet and set aside.
In the same skillet, add the chopped onion. Sauté for 3–4 minutes, scraping up any browned bits from the bottom. Add the garlic and ginger, and cook for another 30 seconds, just until fragrant.
Pour in the coconut milk, stirring well to combine. Bring to a gentle simmer, the sauce will look creamy and slightly thickened.
Stir in the lime zest and lime juice.
Add the browned chicken pieces back into the skillet. Simmer uncovered for 5–8 minutes, until the chicken is fully cooked and the sauce thickens slightly.
Remove from heat and stir in the chopped cilantro.
Serve immediately with rice, quinoa, or sautéed vegetables for a colorful, flavorful plate.
