Crockpot Cowboy Casserole

This Crockpot Cowboy Casserole is a warm, comforting, and filling meal made with seasoned ground beef, tender potatoes, sweet corn, hearty kidney beans, and a rich tomato base. Everything slowly cooks together in the crock pot until thick, flavorful, and satisfying. Topped with melted fiesta blend cheese.

Ingredients

  • 1 lb. ground beef
  • 1 cup onion chopped
  • 1/2 cup chopped green bell pepper
  • 3 –4 red potatoes cubed
  • 1 1/2 cups frozen corn
  • 14.5 oz can kidney beans drained
  • 10 oz rotel
  • 1 tsp pepper
  • 1 tsp salt
  • 2 tsp minced garlic
  • 1/2 tsp chili powder
  • 1/2 cup beef broth
  • 1 cup fiesta blend cheese

Instructions

  • Cook ground beef in a skillet until browned, breaking it up as it cooks. Drain excess grease.
  • Add onion and green bell pepper to the skillet and cook until slightly softened.
  • Add potatoes to the crock pot first.
  • Layer in kidney beans and frozen corn.
  • Add the cooked beef and vegetable mixture.
  • Sprinkle in salt, pepper, garlic, and chili powder.
  • Pour in rotel and beef broth.
  • Cook on high for 3–4 hours or low for 6–8 hours.
  • In the last 30 minutes, top with fiesta blend cheese and let it melt before serving.
