Ingredients

  • 1 3-4 lb. chuck roast
  • 1 ounce ranch seasoning mix
  • 1 ounce au jus gravy mix
  • 6 pepperoncini peppers plus a splash of the juice
  • 1/2 cup butter
  • 2 tbsp oil to sear the roast

Instructions

  • In a large skillet, heat the oil over medium-high heat.
  • Once the oil is hot, add the chuck roast to the pan and sear for 3-4 minutes per side.
  • Place the seared chuck roast into the crock pot.
  • Sprinkle over the ranch and au jus.
  • Add peppers and juice.
  • Slice the butter into 1/2 inch pieces, and place those over top.
  • Cook on low in the crock pot for 8-9 hours.
  • Once the roast is cooked through and beginning to pull apart, remove the peppers and shred the beef.
  • Return the peppers to the pot, if desired.
  • Serve over mashed potatoes or rice.
