Ingredients

  • 2 lbs about 4 pieces of chicken breast
  • 1 cup reduced-sodium soy sauce
  • ½ cup honey
  • ¼ cup hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 6 –8 cloves of garlic
  • 2 scallions for topping
  • 1 tsp sesame seeds
  • Salt & black pepper to taste

Instructions

  • Grate the garlic. This adds so much flavor and helps it melt right into the sauce.
  • Add everything to the slow cooker. Chicken, soy sauce, honey, hoisin, garlic, vinegar, sesame oil, salt, and pepper—just stir it all together.
  • Set your slow cooker to low for 6–7 hours or high for 3–4 hours. Flip the chicken halfway through to make sure it gets nice and juicy all over.
  • Once the chicken is cooked, shred it right in the slow cooker. I use a hand mixer—so quick and easy!
  • Scoop it over rice and sprinkle with sliced scallions and sesame seeds.
