Ingredients

  • 1 yellow onion diced
  • 3 small carrots peeled and sliced into coins
  • 3 ribs celery diced
  • 1 red pepper diced
  • 1 zucchini sliced and halved
  • 1 can diced tomatoes with juice
  • 1 cup frozen green beans
  • 8 cups vegetable broth
  • 1 tsp minced garlic
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp red pepper flakes optional

Instructions

  • Peel and chop all the veggies.
  • Add the veggies to the bottom of the slow cooker.
  • Sprinkle in the seasonings.
  • Pour the broth over everything.
  • Cover and cook on high for 4 hours or low for 6 hours, until the veggies are tender and the flavors are cozy and blended.
