Start by lining your work surface with a sheet of parchment paper.
Color the white fondant with green food coloring — wearing gloves is a good idea to keep your hands from getting stained.
Take a small piece of the fondant and shape it into a little triangular leaf. Set it aside until you’re ready to assemble. Make one leaf for each apple pretzel.
When you’re ready, melt the red candy melts.
Dip each pretzel completely into the melted candy, making sure it’s fully coated. Use a fork to lift the pretzel out, tapping off any extra candy on the side of the bowl.
Place the coated pretzel onto the parchment, then quickly press a fondant leaf on top. Repeat with the rest of the pretzels.
Let them sit for about 10 minutes until the candy hardens.
