Egg Drop Soup

This easy Egg Drop Soup is warm, cozy, with soft egg ribbons in a seasoned broth and a sprinkle of green onion, it’s the great quick comfort food for chilly days or busy nights.

Ingredients

  • 4 cups chicken broth
  • 2 large eggs
  • 1 tsp black pepper
  • ½ tsp crushed red pepper flakes (optional)
  • ¼ tsp salt
  • 1 green onion sliced

Instructions

  • Crack your eggs into a small bowl and whisk them well with ¼ tsp of the pepper.
  • In a medium pot, bring the chicken broth to a boil along with the remaining pepper, crushed red pepper flakes, and salt.
  • Slowly stir the soup in one direction and gently drizzle in the egg mixture.
  • Let the soup come back to a boil for a moment, then remove it from heat.
  • Ladle the soup into bowls and garnish with fresh sliced green onion.
