Honey Pepper Chicken with Rice

This Honey Pepper Chicken is made with tender chicken cooked in a sweet honey-soy glaze with garlic and red bell pepper, served over rice and topped with scallions. A quick and easy family dinner.

Ingredients

  • 1 cup white rice
  • 3-4 boneless skinless chicken breasts diced
  • 2 tbsp vegetable oil divided
  • 1 tsp garlic salt
  • 1 tsp pepper
  • 1 tsp red pepper flakes
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • Scallions for topping

Instructions

  • Start cooking the rice so it’s done around the same time as the chicken.
  • In a large bowl, combine the diced chicken with 1 tbsp oil, garlic salt, pepper, and red pepper flakes (if using).
  • Heat the remaining 1 tbsp oil in a skillet over medium-high heat.
  • Add the chicken and cook, stirring occasionally, for about 8 minutes or until golden brown and cooked through. Remove chicken and set aside.
  • In the same skillet, add the garlic and red bell pepper. Cook for 1-2 minutes over medium heat.
  • Add the honey and soy sauce and stir until a sauce forms and thickens slightly. Return the chicken to the skillet and toss to coat.
  • Serve over rice and sprinkle with chopped scallions.
