Honey Pepper Chicken with Rice
This Honey Pepper Chicken is made with tender chicken cooked in a sweet honey-soy glaze with garlic and red bell pepper, served over rice and topped with scallions. A quick and easy family dinner.

Ingredients

vegetable oil

red pepper flakes

honey

soy sauce
Scallions for topping
Instructions
Start cooking the rice so it’s done around the same time as the chicken.
In a large bowl, combine the diced chicken with 1 tbsp oil, garlic salt, pepper, and red pepper flakes (if using).
Heat the remaining 1 tbsp oil in a skillet over medium-high heat.
Add the chicken and cook, stirring occasionally, for about 8 minutes or until golden brown and cooked through. Remove chicken and set aside.
In the same skillet, add the garlic and red bell pepper. Cook for 1-2 minutes over medium heat.
Add the honey and soy sauce and stir until a sauce forms and thickens slightly. Return the chicken to the skillet and toss to coat.
Serve over rice and sprinkle with chopped scallions.
