Ingredients

  • 2 cups cooked long-grain white rice
  • 4 cooked chicken sausages sliced
  • 1 yellow bell pepper diced
  • 1 yellow onion diced
  • 1 can 14 oz diced tomatoes
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 3 tbsp chopped green onion for garnish

Instructions

  • In a large skillet or Dutch oven, heat the olive oil over medium heat.
  • Add the sliced sausage and cook for 5 minutes, or until browned on each side. Set aside.
  • In the same skillet, add the diced onion and bell pepper to the skillet. Sauté for about 5 minutes, or until the onion becomes translucent and the bell pepper softens.
  • Add the sausage, and the rest of the ingredients (except the green onions). Stir well to coat the rice with the seasonings.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for 5 minutes.
  • Remove the skillet from heat. Sprinkle the chopped green onions over the top. Serve hot
