This Ritz Cracker Chicken Casserole is a classic comfort food that’s easy to make, full of flavor, and perfect for family dinners, easy weeknight meals, or holiday potlucks.
6cupscooked shredded chickenabout 2 small rotisserie chickens, skin and bones removed
8–10 slices cooked baconchopped
¾cupsliced green onionsplus more for garnish
10.5ozcream of chicken soup(2 cans)
8ozsour cream
1tspItalian seasoning
2full sleeves Ritz crackerscrushed
½cup1 stick unsalted butter, melted
Instructions
Preheat the oven to 350°F and lightly grease a 9x13 baking pan.
In a large bowl, combine the shredded chicken, cooked bacon, green onions, cream of chicken soup, sour cream, and Italian seasoning. Stir until well mixed.
Transfer the mixture to the prepared baking pan.
In a medium bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are coated evenly.
Sprinkle the cracker mixture over the top of the chicken.
Bake for 30 minutes, until the casserole is bubbling and the topping is golden brown.
