Preheat your oven to 350 degrees Fahrenheit. Spray a 9x13 baking dish with nonstick spray and set aside.
In a large skillet, cook and crumble the ground sausage until cooked through. Drain and set aside.
In a medium saucepan, heat the butter until melted.
Whisk in the flour and cook 1-2 minutes.
Add the salt, pepper, and red pepper flakes.
Slowly add the milk, whisking as you add.
Cook on medium heat, whisking frequently, until gravy thickens.
Take the biscuits and cut each one into quarters. Layer these in the bottom of the 9x13.
Take about 1/4 of the cooked crumbled sausage and stir it into the gravy.
Sprinkle the remaining sausage over top of the biscuits.
Sprinkle the shredded cheese over top.
In a medium mixing bowl, whisk together 6 eggs and the heavy cream.
Pour this over top of the biscuits, sausage, and cheese.
Finally, pour the gravy over top of everything.
Bake for 35-40 minutes, until cooked through. You can check by inserting a fork in the center and making sure the biscuit dough is cooked through.
