Ingredients

  • 2 pounds beef stew meat
  • 1 teaspoon black pepper
  • 1 tsp garlic powder
  • 1 tbsp sesame oil
  • 1 small onion diced
  • 1 tbsp minced garlic
  • 1 cup beef broth
  • cup soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp oyster sauce
  • 1 tbsp Worcestershire sauce
  • 3 cups cooked and cooled white rice
  • 1 12 ounce bag frozen peas and carrots
  • 4 eggs
  • 1 tbsp butter
  • 3 green onions sliced
  • 2 tbsp soy sauce
  • 1 tsp sesame oil

Instructions

  • Place the stew meat into a 6-quart slow cooker.
  • Season the beef with the black pepper and garlic powder.
  • Add the sesame oil, onion, and garlic over the beef.
  • In a bowl, whisk together the beef broth, soy sauce, brown sugar, oyster sauce, and Worcestershire sauce.
  • Pour the sauce mixture over the beef.
  • Cover and cook on LOW for 6–7 hours or HIGH for 4–5 hours, until the beef is tender.
  • About 30 minutes before serving, cook the eggs.
  • Melt the butter in a skillet over medium heat.
  • Add the eggs and scramble until fully cooked.
  • Add the frozen peas and carrots to the slow cooker.
  • Stir in the cooked rice and scrambled eggs.
  • Drizzle in the remaining soy sauce and sesame oil.
  • Gently stir until everything is evenly combined.
  • Cover and cook for another 20–30 minutes until heated through.
  • Sprinkle with sliced green onions before serving.
