Ingredients

  • 2 pounds flank steak sliced into 1/4-inch strips
  • 3-4 tbsp cornstarch
  • 1 large green bell pepper sliced thick
  • 1 large red bell pepper sliced thick
  • 1 medium onion sliced thick
  • 14.5 ounce can petite diced tomatoes with liquid
  • ½ cup beef broth or water
  • ½ cup soy sauce
  • 2-3 tbsp brown sugar to desired sweetness
  • 1 tsp Worcestershire sauce
  • 3-4 garlic cloves minced
  • 1 tsp fresh ginger peeled and minced
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  • Start by coating your sliced flank steak with cornstarch right in the slow cooker.
  • Add the peppers, onions, and tomatoes on top.
  • Mix the sauce ingredients in a bowl and pour it all over.
  • Cover and cook on low for about 6 hours, or on high for 3 hours if you’re short on time.
  • Serve it over a bed of white rice and enjoy!
