Heat the olive oil in a large skillet over medium-high heat.
Mix the red pepper flakes, garlic powder, minced onion, thyme, salt, and pepper. Rub the seasoning all over the pork loin.
Sear the pork roast for about 3 minutes on each side until lightly browned.
Place the pork roast into the slow cooker.
In a small bowl, mix the honey, soy sauce, minced garlic, and Dijon mustard. Pour the sauce over the pork.
Cover and cook on low for 4–5 hours, until the pork is tender.
Slice the pork and garnish with green onions before serving.
