Accordion Potatoes are thinly sliced golden potatoes, cut in a fun criss-cross style, lightly seasoned, and air-fried until golden and crispy. They’re an easy side dish or snack.
Peel and rinse the potatoes, then pat them dry with a kitchen towel.
Slice the potatoes into pieces about ¼ to ½ inch thick.
Place each slice on a cutting board. Using chopsticks on both sides (to avoid cutting all the way through), make thin straight cuts on one side of the slice.
Flip it over and make diagonal cuts on the other side.
Brush with olive oil and sprinkle with salt.
Place in the air fryer at 350°F for 30–35 minutes. Flip halfway through to get them evenly crispy.
