Preheat the oven to 350°F and line a baking sheet with parchment paper.
Cut your brie into small cubes—just enough to fit inside each little phyllo shell.
Set up your phyllo cups on the baking sheet. Pop a cube of brie into each one, then add a small spoonful of apricot jam right on top.
Bake for 10 minutes until the brie is melted and bubbly.
