3-Ingredient Brie Phyllo Tarts
These Brie Phyllo Tarts are one of the easiest quick appetizers I’ve ever made. With just three ingredients and about 20 minutes, you’ll have a party-ready bite to serve. They’re buttery, flaky, slightly sweet, and totally addictive—even better, they’re finger food, so no forks needed!

WANT TO SAVE THIS FOR LATER?
I love making these for holiday parties, baby showers, and brunches. They’re warm, gooey, flaky, and sweet all in one bite—basically everything you want in a mini tart.
How to Make Brie Phyllo Tarts
Ingredients you’ll need for this recipe

Step by Step Guide
1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
2. Cut your brie into small cubes—just enough to fit inside each little phyllo shell.

3. Set up your phyllo cups on the baking sheet. Pop a cube of brie into each one, then add a small spoonful of apricot jam right on top.

4. Bake for 10 minutes until the brie is melted and bubbly.
Serve and Enjoy!

Important Recipe Notes:
- Use pre-made phyllo cups to save time—they’re usually found in the freezer section. No need to thaw before baking!
- Cut the brie with the rind on—it melts beautifully and adds extra flavor. Just make sure the cubes fit neatly inside each shell.
- Don’t overfill the cups. A little brie and a small spoonful of jam go a long way—too much can cause overflow while baking.
- Swap the jam based on the occasion or what you have on hand—fig, raspberry, or cranberry all pair well with brie.
- Best served warm—they’re still tasty at room temp, but that melty brie right out of the oven is next level!
- Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350°F for a few minutes to crisp them back up—skip the microwave so they don’t get soggy!
