Cheesy Tex-Mex John Wayne Casserole

This John Wayne Casserole is a hearty Tex-Mex dish layered with biscuits, seasoned ground beef, and creamy cheese. It’s an easy, family-friendly dinner for busy weeknights or potlucks.

Ingredients

  • 16 oz tube of jumbo biscuits
  • 1 lb lean ground beef
  • ½ white onion diced
  • 10 oz can Rotel drained
  • 4 oz green chiles drained
  • 1 oz packet taco seasoning
  • cup water
  • 8 oz cream cheese softened
  • ½ cup sour cream
  • 1 tsp garlic powder
  • 8 oz cheddar cheese shredded and divided
  • Fresh parsley for garnish

Instructions

  • Preheat your oven to 350°F.
  • Chop the onion and parsley.
  • Grease a 9x13-inch pan and press the biscuits into it. Bake for 10 minutes, then remove from the oven.
  • In a large skillet, cook the ground beef and onion over medium heat until the meat is browned. Drain any grease.
  • Add Rotel, green chiles, taco seasoning, and water. Stir until combined, then pour the mixture over the biscuit layer.
  • In a separate bowl, mix the cream cheese, sour cream, garlic powder, and 1 cup of cheddar cheese. Spread this over the meat mixture.
  • Sprinkle the remaining cheese on top.
  • Bake for 25–30 minutes until the cheese is melted and bubbly. Let it cool for about 5 minutes, then top with fresh parsley before serving.
