Chocolate Cake Mix Hedgehog Cookies

These Hedgehog Cookies are easy, bite-sized treats made with cake mix and a few simple ingredients you probably have on hand. They’re perfect for kids, parties, and fun spring baking days.

Ingredients

  • 13.25 oz box of milk chocolate cake mix
  • ½ cup vegetable oil
  • 2 eggs
  • ½ cup chocolate sprinkles
  • 1 cup white chocolate melting wafers
  • Black gel icing tube

Instructions

  • Preheat the oven to 359 degrees. Line a baking sheet with parchment paper.
  • Stir the cake mix, oil, and eggs together in a large bowl until a dough forms.
  • Use a 1½ tablespoon cookie scoop to gather dough and drop onto the baking sheet, spacing about 2 inches apart.
  • Use a spoon to make a small well in the center of each cookie. Press sprinkles into the sides and top.
  • Bake for 8–10 minutes.
  • Remove from the oven and gently press the center down again if needed. Transfer cookies to a cooling rack.
  • Once cooled, set aside ¼ cup of the melting wafers. Melt the remaining ¾ cup in a microwave-safe bowl in 30-second intervals, stirring between each time.
  • Spoon the melted chocolate into the center well of each cookie. Let it set.
  • Add the remaining ¼ cup of melting wafers to a piping bag and heat for 30 seconds. Massage the bag and repeat until melted.
  • Snip the tip of the bag and pipe small white chocolate dots on each side of the center for cheeks and at the top middle for the nose.
  • Once set, add a small dab of black icing on the nose and two small dabs above for the eyes.
