Ham and Cheese Cucumber Sandwich Bites

These Ham and Cheese Cucumber Sandwich Bites are light, fresh, and totally fuss-free! With only 4 ingredients, you can whip up the perfect bite-sized snack or party appetizer. Great for tea parties, baby showers, or anytime you’re craving a low-carb snack!

Ingredients

  • 1 large cucumber
  • 3–4 tbsp whipped cream cheese
  • 3 slices cheddar cheese
  • 3 slices deli ham

Instructions

  • First, peel the cucumber in stripes—peel a strip, skip a strip, peel a strip—so it looks pretty. Then slice it into 24 even rounds.
  • Cut the cheddar and ham into quarters.
  • Load up your piping bag with the whipped cream cheese (or use a spoon!), then pipe a little dollop onto 12 of the cucumber slices.
  • Add a slice of cheddar cheese on top.
  • Fold the ham quarter in half twice so it fans out a bit and pop it on top of the cheese.
  • Place another cucumber slice on top to make a cute little sandwich and secure it all with a toothpick.
  • Serve right away, or pop them in the fridge until it’s snack time!
