Ingredients

  • 14 oz kielbasa
  • 2 cups broccoli florets
  • 1 red bell pepper cut into 2-inch pieces
  • 1 yellow bell pepper cut into 2-inch pieces
  • 1 lb baby potatoes halved
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tbsp freshly shredded Parmesan
  • 1 tbsp fresh chopped parsley for garnish

Instructions

  • Preheat the oven to 400°F. Line a large baking sheet with parchment paper for easier cleanup.
  • Cut the veggies and kielbasa into pieces.
  • In a large bowl, mix olive oil with garlic powder, onion powder, paprika, salt, and pepper.
  • Add the veggies and kielbasa to the bowl and toss to coat evenly.
  • Spread everything onto the prepared baking sheet in a single layer.
  • Bake for 15 minutes, then toss and bake for an additional 10–15 minutes, until the potatoes and vegetables are tender.
  • Remove from the oven and sprinkle with shredded Parmesan and chopped parsley. Serve warm.
