Important Recipe Notes
- Cut potatoes and peppers into similar sizes so everything cooks evenly.
- Make sure all veggies and sausage are well-coated for even roasting and flavor.
- Depending on the size of your potato halves, you may need a few extra minutes to make them tender.
- Lining your baking sheet makes cleanup easier and prevents sticking.
- You can change or add vegetables—zucchini, carrots, or cauliflower all work well.
- For sausage alternatives, you can use chicken sausage, turkey sausage, or plant-based sausage if desired.
- Sprinkle Parmesan and parsley after baking to keep them fresh and flavorful.
