Important Recipe Notes

  • Cut potatoes and peppers into similar sizes so everything cooks evenly.
  • Make sure all veggies and sausage are well-coated for even roasting and flavor.
  • Depending on the size of your potato halves, you may need a few extra minutes to make them tender.
  • Lining your baking sheet makes cleanup easier and prevents sticking.
  • You can change or add vegetables—zucchini, carrots, or cauliflower all work well.
  • For sausage alternatives, you can use chicken sausage, turkey sausage, or plant-based sausage if desired.
  • Sprinkle Parmesan and parsley after baking to keep them fresh and flavorful.
