One-Pot Instant Pot Shrimp Boil

This easy Instant Pot Shrimp Boil is a one-pot dinner with tender shrimp, smoky sausage, sweet corn, and potatoes—ready in just 40 minutes.

Ingredients

  • 1 lb large shrimp peeled and deveined, tails on or off
  • 1 lb fingerling potatoes mixed medley
  • 4 ears of corn cut into thirds
  • 1 lb smoked sausage sliced
  • 2 cups low-sodium chicken broth or water
  • 2 tbsp Old Bay seasoning plus extra for garnish
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon halved
  • 3 tbsp unsalted butter melted
  • 1 tbsp fresh parsley chopped, optional

Instructions

  • Wash and prep the shrimp, potatoes, corn, and sausage. Slice the sausage to your preferred thickness.
  • Pour the chicken broth or water into the Instant Pot.
  • Add the potatoes first so they cook evenly, then layer the corn on top, followed by the sausage.
  • Sprinkle most of the Old Bay seasoning, garlic powder, salt, and black pepper over everything, saving about 1/2 tbsp of Old Bay for the shrimp later.
  • Close the lid, set the valve to sealing, and cook on High Pressure for 5 minutes. When it’s done, perform a quick release by carefully turning the valve to venting.
  • Add the shrimp on top of the cooked ingredients and sprinkle the reserved Old Bay seasoning over them. Close the lid, set the valve to sealing, and cook on High Pressure for 1 minute. Perform a quick release when done.
  • Drizzle juice from half a lemon over the shrimp boil. Drain most of the liquid or serve with some broth for dipping. Pour melted butter over the top and garnish with extra Old Bay seasoning, parsley, and lemon wedges.
  • Serve immediately with crusty bread or rice for a complete meal.
