How to Make Instant Pot Shrimp Boil

Ingredients you’ll need for this recipe
  • 1 lb large shrimp (peeled and deveined, tails on or off)
  • 1 lb fingerling potatoes (mixed medley)
  • 4 ears of corn (cut into thirds)
  • 1 lb smoked sausage (sliced)
  • 2 cups low-sodium chicken broth or water
  • 2 tbsp Old Bay seasoning (plus extra for garnish)
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lemon (halved)
  • 3 tbsp unsalted butter (melted)
  • 1 tbsp fresh parsley (chopped, optional)

Step-by-Step Guide

1. Wash and prep the shrimp, potatoes, corn, and sausage. Slice the sausage to your preferred thickness.

2. Pour the chicken broth or water into the Instant Pot.

3. Add the potatoes first so they cook evenly, then layer the corn on top, followed by the sausage.

3. Sprinkle most of the Old Bay seasoning, garlic powder, salt, and black pepper over everything, saving about 1/2 tbsp of Old Bay for the shrimp later.

4. Close the lid, set the valve to sealing, and cook on High Pressure for 5 minutes. When it’s done, perform a quick release by carefully turning the valve to venting.

5. Add the shrimp on top of the cooked ingredients and sprinkle the reserved Old Bay seasoning over them. Close the lid, set the valve to sealing, and cook on High Pressure for 1 minute. Perform a quick release when done.

6. Drizzle juice from half a lemon over the shrimp boil. Drain most of the liquid or serve with some broth for dipping. Pour melted butter over the top and garnish with extra Old Bay seasoning, parsley, and lemon wedges.

Important Recipe Notes

  • Large shrimp cook very quickly in the Instant Pot. Don’t skip the second short pressure cook—overcooked shrimp can become rubbery.
  • Adjust the amount to your taste. Start with the recommended amount and sprinkle more on the finished dish if you like a stronger flavor.
  • If you don’t have fingerling potatoes, you can use baby red or Yukon gold potatoes if you prefer. Just make sure they are similar in size for even cooking.
  • Use low-sodium chicken broth or water. Broth gives more flavor, while water keeps it lighter.
  • Serve immediately for the best taste and texture. You can drizzle the melted butter over the top and provide extra lemon wedges for squeezing.
