Preheat your oven to 350°F.
Chop up your cream cheese into small chunks (they melt better that way).
Add the pepper jack cheese and Rotel into your baking dish. Scatter those cream cheese cubes on top.
Pop it in the oven and bake for 15 minutes.
Take it out, give everything a good stir, and slide it back in for another 10 minutes.
Sprinkle with fresh cilantro, serve it up hot with tortilla chips, baguette slices, pretzels, or even fresh veggies.
