Sheet Pan Bourbon Smothered Chicken

This Sheet Pan Bourbon Smothered Chicken is a delicious and easy dinner made with tender chicken, sautéed onions and mushrooms, melty Provolone cheese, and a sweet and savory bourbon maple glaze. Serve it with your favorite side dishes.

Sheet Pan Bourbon Smothered Chicken

Ingredients

  • 2 boneless skinless chicken breasts, sliced from the center into thin pieces
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • 1 tbsp olive oil
  • 1 small onion sliced
  • 4 oz fresh sliced mushrooms
  • 4 slices Provolone cheese

For the Bourbon Maple Glaze

  • ¼ cup bourbon
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp balsamic vinegar
  • ¼ tsp salt •
  • ¼ tsp pepper

Instructions

  • Preheat the oven to 400 degrees. Line a small baking sheet with parchment paper.
  • Slice each chicken breast into thin cutlets, so you have 4 thin chicken breasts.
  • Mix the 1 tsp salt, ½ tsp pepper and ½ tsp garlic powder together and sprinkle over both sides of the chicken.
  • Heat the olive oil in a large skillet over medium heat, then add the chicken breasts and sear for 1 minute. Flip the chicken over and sear for an additional minute.
  • Take the skillet off the heat, remove the chicken, and carefully add the bourbon to the skillet.
  • Cook over medium heat and cook for 3 minutes.
  • Whisk in the maple syrup, Dijon mustard, balsamic vinegar and the salt and pepper.
  • Add the onions and mushrooms.
  • Simmer for 3-4 minutes.
  • Arrange the chicken on the sheet pan. Top with a little of the onions, mushrooms and glaze, and a slice of Provolone cheese.
  • Bake for 10-15 minutes until chicken is cooked through.
  • Serve with your favorite side dishes.
