Step-by-Step Guide
1. Preheat the oven to 400 degrees. Line a small baking sheet with parchment paper.
2. Slice each chicken breast into thin cutlets, so you have 4 thin chicken breasts.

3. Mix the 1 tsp salt, ½ tsp pepper and ½ tsp garlic powder together and sprinkle over both sides of the chicken.


4. Heat the olive oil in a large skillet over medium heat, then add the chicken breasts and sear for 1 minute. Flip the chicken over and sear for an additional minute.


5. Take the skillet off the heat, remove the chicken, and carefully add the bourbon to the skillet.
6. Cook over medium heat and cook for 3 minutes.
7. Whisk in the maple syrup, Dijon mustard, balsamic vinegar and the salt and pepper.


8. Add the onions and mushrooms.

9. Simmer for 3-4 minutes.

10. Arrange the chicken on the sheet pan. Top with a little of the onions, mushrooms and glaze, and a slice of Provolone cheese.


12. Bake for 10-15 minutes until chicken is cooked through.
13. Serve with your favorite side dishes.

Important Recipe Notes
- Cut the chicken breasts into thin, even cutlets so they cook at the same rate and stay tender.
- Don’t overcook the chicken: Since the chicken is seared first and then baked, keep an eye on it during the last few minutes of cooking so it doesn’t dry out.
