Instructions
Preheat the oven to 375 degrees. Line a naking sheet with parchment paper for easier cleanup.
Wash and dice the potatoes, then cut the broccoli.
Add the potatoes and vegetables to a large bowl, drizzle with olive oil and seasonings, then toss to coat.
Arrange the potatoes and vegetables on the sheet pan, and make a rectangular space in the center for the pork tenderloin, then set it in the middle.
Transfer the pan to the oven and bake for 45 minutes. Remove and cut the pork tenderloin into 1 ½ - 2 inch slices, then cook for an additional 5-15 minutes until completely done.
