Ingredients

  • 2 lb Garlic and Herb Pork Tenderloin
  • 2 pounds russet potatoes washed and diced into 1 ½ - 2 inch cubes
  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 2-3 tbsp olive oil
  • 2 tsp Garlic powder
  • 2 tsp italian seasoning

Instructions

  • Preheat the oven to 375 degrees. Line a naking sheet with parchment paper for easier cleanup.
  • Wash and dice the potatoes, then cut the broccoli.
  • Add the potatoes and vegetables to a large bowl, drizzle with olive oil and seasonings, then toss to coat.
  • Arrange the potatoes and vegetables on the sheet pan, and make a rectangular space in the center for the pork tenderloin, then set it in the middle.
  • Transfer the pan to the oven and bake for 45 minutes. Remove and cut the pork tenderloin into 1 ½ - 2 inch slices, then cook for an additional 5-15 minutes until completely done.
