  • 2 pounds russet potatoes, washed and diced into 1 ½ – 2 inch cubes
  • 2 cups broccoli florets
  • 2 cups baby carrots
  • 2-3 tbsp olive oil
  • 2 tsp Garlic powder
  • 2 tsp italian seasoning

1. Preheat the oven to 375 degrees. Line a naking sheet with parchment paper for easier cleanup.

2. Wash and dice the potatoes, then cut the broccoli.

3. Add the potatoes and vegetables to a large bowl, drizzle with olive oil and seasonings, then toss to coat.

4. Arrange the potatoes and vegetables on the sheet pan, and make a rectangular space in the center for the pork tenderloin, then set it in the middle.

5. Transfer the pan to the oven and bake for 45 minutes. Remove and cut the pork tenderloin into 1 ½ – 2 inch slices, then cook for an additional 5-15 minutes until completely done.

Important Recipe Notes

  • Cut vegetables evenly so everything cooks at the same time. If the potato chunks are too big, they may take longer than the carrots and broccoli.
  • Don’t overcrowd the pan. Spread everything out in a single layer so the vegetables roast instead of steaming.
  • Use a meat thermometer if possible. Pork tenderloin is best when it reaches an internal temperature of 145°F (63°C) and is still juicy inside.
  • Stir or flip veggies halfway through cooking if you want more even browning on all sides.
  • Add broccoli later if you prefer it crisp. If you don’t like soft broccoli, you can add it during the last 15–20 minutes of baking.
  • Let the pork rest before slicing. Resting for about 5–10 minutes helps keep the juices inside so the meat stays tender.
  • You can add paprika, onion powder, or a little lemon pepper for extra flavor depending on what your family likes.
