These Chocolate-Covered Strawberry Hedgehogs are a sweet and silly twist on classic chocolate-dipped berries! They’re perfect for kids' parties, summer gatherings, or just a fun baking activity to do with your little ones.
Rinse your strawberries, pat them dry, and pop them in the fridge for about 30 minutes so they’re nice and firm. Trim off the green tops.
In a double boiler or the microwave (pulse mode, 15-second intervals), melt your dark chocolate until smooth. Stir in a little butter or coconut oil if you want that pretty, glossy finish.
Stick each strawberry on a skewer and dip about two-thirds of it (wide end down) into the melted chocolate. Then dip that same part into the chocolate sprinkles.
Set them gently on a parchment-lined board or tray and refrigerate for about an hour until the chocolate firms up.
Use a bit of melted chocolate as glue to stick on the sugar eyes and chocolate chip noses. For whiskers, poke a few pieces of light-colored vermicelli into the pointed end of the berry.
Pop the hedgehogs back into the fridge for another 30 minutes, then transfer to a pretty plate. You can garnish with mint leaves or edible flowers for an extra woodland vibe.
