How to Make Chocolate-Covered Strawberry Hedgehogs

Ingredients you’ll need for this recipe
  • 8 ripe strawberries (same size if possible)
  • 3 oz. dark chocolate (I use 56–80% cocoa)
  • 3 tbsp. chocolate vermicelli sprinkles
  • 16 sugar eyes
  • 8 chocolate chips
  • ½ tsp. light-colored vermicelli

Step by Step Guide

1. Rinse your strawberries, pat them dry, and pop them in the fridge for about 30 minutes so they’re nice and firm. Trim off the green tops.

2. In a double boiler or the microwave (pulse mode, 15-second intervals), melt your dark chocolate until smooth. Stir in a little butter or coconut oil if you want that pretty, glossy finish.

3. Stick each strawberry on a skewer and dip about two-thirds of it (wide end down) into the melted chocolate. Then dip that same part into the chocolate sprinkles.

4. Set them gently on a parchment-lined board or tray and refrigerate for about an hour until the chocolate firms up.

5. Use a bit of melted chocolate as glue to stick on the sugar eyes and chocolate chip noses. For whiskers, poke a few pieces of light-colored vermicelli into the pointed end of the berry.

6. Pop the hedgehogs back into the fridge for another 30 minutes, then transfer to a pretty plate. You can garnish with mint leaves or edible flowers for an extra woodland vibe.

Serve and Enjoy!

Important Recipe Notes

  • Use ripe, firm strawberries – Soft or overripe berries can be tricky to dip and decorate. Look for ones that are similar in size for a consistent look.
  • Chill the strawberries first – Cold strawberries help the chocolate set faster and stick better.
  • Don’t overheat the chocolate – Melt slowly using pulse mode in the microwave or a double boiler. If it gets too hot, it can seize or burn.
  • Add a little butter or coconut oil – This gives the chocolate a smooth, shiny finish that’s perfect for presentation.
  • Set up a dipping station – Have your sprinkles, eyes, noses, and other decorations ready before dipping. It makes things easier and way more fun—especially with kids helping!
  • You can swap out the chocolate sprinkles for nuts, coconut, crushed cookies, or colorful jimmies for different looks and flavors.
  • Chocolate can start to harden fast once it’s off the heat, so it helps to decorate in small batches.
  • Keep finished hedgehogs chilled until you’re ready to serve. They’re best enjoyed within 1–2 days.
