Ingredients

  • 1 cucumber , shredded
  • 2 cups plain Greek yogurt
  • 2 tbsp lemon juice
  • 3 sprigs fresh dill , chopped
  • 3 sprigs fresh parsley , chopped
  • 2 tbsp garlic , minced
  • 1/3 tsp salt
  • 1/3 tsp pepper

Instructions

  • Start by grating the cucumber into a bowl. Here’s the key part—cucumbers hold a lot of water, so you’ll want to press out the moisture and drain it well.
  • In a medium-sized bowl, add the Greek yogurt, shredded cucumber, lemon juice, and minced garlic. Give it a good stir until everything is nicely combined.
  • Now it’s time to bring in those fresh herbs and seasoning. Toss in the chopped dill, parsley, salt, and pepper, and mix well.
