Important Recipe Notes
- Use cooked chicken—rotisserie chicken works great for saving time. Shredded or chopped both work fine.
- Make sure it’s softened before mixing so it blends smoothly with the sour cream and other ingredients.
- You can use freshly cooked bacon or store-bought bacon crumbles to save prep time.
- Adjust the amount of Jalapenos based on your family’s spice preference. Leave them out if you want a completely mild casserole.
- Bake the casserole uncovered so the tater tots stay golden and crisp.
- Fiesta blend adds nice flavor, but you can use cheddar, Colby Jack, or mozzarella if that’s what you have.
- Assemble the casserole ahead of time, cover, and refrigerate until ready to bake. Just add 5–10 extra minutes to the baking time if chilled.
- Let it sit for a few minutes after baking so it’s easier to scoop and serve.
