1. Place the stew meat into a 6-quart slow cooker.

2. Season the beef with the black pepper and garlic powder.

3. Add the sesame oil, onion, and garlic over the beef.

4. In a bowl, whisk together the beef broth, soy sauce, brown sugar, oyster sauce, and Worcestershire sauce.

Important Recipe Notes

  • Use day-old rice. Cold, cooked rice gives the best fried rice texture and helps prevent the rice from becoming soft or mushy.
  • Don’t add uncooked rice. This recipe is made with fully cooked rice. Uncooked rice won’t cook properly in the slow cooker with the beef.
  • Cook the eggs separately. Scrambling the eggs in a skillet before adding them creates the classic fried rice texture and keeps them from disappearing into the rice.
  • Wait until the end to add the rice and vegetables. Stir them in during the last 20–30 minutes so they stay tender without overcooking.
  • Use low-sodium soy sauce if needed. The oyster sauce and Worcestershire sauce already add plenty of savory flavor, so low-sodium soy sauce helps keep the dish from becoming too salty.
