How to Make Italian Sausage Tortellini Casserole

Ingredients you’ll need for this recipe
  • 19 oz package frozen cheese tortellini
  • 1 lb ground italian sausage
  • 24 oz jar pasta sauce
  • ¼ cup parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp ground oregano
  • 1 tsp ground basil
  • 1 ½ cups shredded mozzarella cheese
  • Parsley to garnish

Step-by-Step Guide

1. Preheat the oven to 350 degrees.

2. Boil the tortellini according to package directions in a large pot for 3 minutes, then drain water and add cooked tortellini to a large bowl.

3. Cook the italian sausage in a medium skillet over medium heat, breaking the meat apart as it cooks, until no longer pink. Drain the grease and add the meat to the bowl with tortellini.

4. Add the seasonings, parmesan cheese, and pasta sauce. Toss to coat.

5. Grease an 8×8 inch casserole dish and pour the mixture into it, spread to an even layer.

6. Top with mozzarella cheese and cover with aluminum foil. Bake for 20 minutes, remove foil and broil until cheese is perfectly melted.

7. Chop a little bit of parsley to garnish if desired.

Important Recipe Notes

  • Don’t overcook the tortellini. Since it will bake in the oven, boil it just until slightly tender (about 3 minutes). This keeps it from getting too soft in the casserole.
  • Drain the sausage well. After cooking the Italian sausage, make sure to drain the grease so the casserole doesn’t turn out oily.
  • Use your favorite pasta sauce. A good-quality jarred sauce makes a big difference in flavor. Choose one your family already loves.
  • Adjust the seasoning if needed. Taste the sausage and sauce mixture before baking. Some pasta sauces are already well seasoned, so you can slightly reduce the garlic powder, oregano, or basil if needed.
  • Cover while baking. Keeping the foil on for the first part of baking helps everything heat through without drying out. Remove the foil at the end so the mozzarella melts nicely and gets lightly golden.
  • Allow the casserole to sit for about 5 minutes after baking. This helps it set and makes it easier to scoop and serve.
  • You can assemble the casserole earlier in the day, cover it, and store it in the fridge. When ready to bake, just add a few extra minutes to the cooking time.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven until warmed through.
