Important Recipe Notes

  • Cut the chicken into even, bite-sized pieces so they cook quickly and evenly. This also helps keep them tender and juicy.
  • Don’t overcook the chicken in the first step—it should just be lightly browned since it will finish cooking in the sauce later.
  • Cook the vegetables until they are just tender but still slightly crisp. This keeps the bowl fresh and not soggy.
  • Always mix the cornstarch with water first before adding it to the sauce. This prevents lumps and helps the sauce thicken smoothly.
  • Adjust the sweetness and saltiness of the teriyaki sauce to your taste. You can add a little more honey for sweetness or a splash of soy sauce if needed.
  • Let the sauce simmer for a few minutes so it fully coats the chicken and vegetables and turns glossy.
  • Serve the dish immediately over warm rice for the best texture and flavor. It tends to thicken more as it sits.
  • This recipe is great for meal prep, but store the rice and chicken separately so everything stays fresh when reheated.
