Important Recipe Notes
- Use lean ground beef. This helps keep the dish from getting too greasy. If you use regular ground beef, be sure to drain the extra fat before adding the other ingredients.
- Do not cook the pasta first. The pasta cooks right in the skillet with the broth and sauce. This helps it soak up all the flavor.
- Stir occasionally while simmering. This keeps the pasta from sticking to the bottom of the pan and helps it cook evenly.
- Keep the skillet covered. Covering the pan helps the pasta cook through and keeps enough moisture in the dish.
- If the pasta is not fully cooked but most of the liquid is gone, add a little more beef broth (about ¼ cup at a time) and continue cooking.
- Freshly shredded cheddar melts more smoothly than pre-shredded cheese.
- After stirring in the cheese, let the pasta rest for a few minutes. It will thicken up as it cools slightly.
- Keep leftovers in an airtight container in the fridge for up to 3–4 days. Add a splash of broth or water when reheating to loosen it up.
