Step-by-Step Guide
1. Preheat your oven to 350 degrees Fahrenheit. Spray a 9×13 inch baking dish with nonstick spray and set aside.
2. In a skillet, heat some oil over medium-high heat. Season the chicken with salt and pepper. Cook the chicken breasts, about 3-4 minutes per side, until cooked through. Set aside.

3. Add water to a large pot, and boil the pasta, according to box directions.
4. Drain the pasta and rinse with cold water. Then, add to a large mixing bowl.

5. Add chicken, corn, tomatoes, red onion, and 1 1/2 cups shredded cheese. Mix.

6. Add the ranch and bbq sauce. Mix to combine. Add salt and pepper, to taste.


7. Pour this mixture into the prepared 9×13 pan.

8. Sprinkle the remaining 1/2 cup shredded cheese over top.

9. Bake at 350 for 15-20 minutes, until cheese is bubbly.

Important Recipe Notes
- Cook the pasta just until al dente. Since the pasta will bake in the oven, slightly firm pasta helps prevent it from becoming too soft.
- Use thinner sliced chicken breasts. They cook quickly and evenly in the skillet, making this recipe faster and easier to prepare.
- If you want to save time, you can skip cooking the chicken and use about 2–3 cups of shredded rotisserie chicken instead.
- If you prefer a stronger barbecue flavor, add a little extra BBQ sauce. If you like it creamier, add a bit more ranch dressing.
- Don’t skip rinsing the pasta with cold water. This stops the cooking process and helps keep the pasta from getting mushy when baked.
