Important Recipe Notes
- Dice the potatoes into ½–1 inch cubes to ensure they cook evenly and become tender in the baking time.
- You can use fresh, frozen, or a mix of vegetables. Make sure frozen veggies are thawed before mixing into the casserole.
- For best results, shred your own cheddar cheese—it melts better than pre-shredded varieties.
- You can assemble the casserole a few hours ahead and keep it covered in the fridge until ready to bake.
- Taste the cooked ground beef before mixing with soups to adjust salt, pepper, or garlic powder as needed.
- Keep the casserole covered with foil for the first 40 minutes to prevent the cheese from over-browning. Remove foil for the last 15–20 minutes to melt and lightly brown the cheese on top.
- Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven until warmed through.
