How to Make Cucumber Sandwiches

  • 8 oz cream cheese, softened
  • 3 tbsp mayonnaise
  • 1 oz packet ranch seasoning
  • 1 English cucumber
  • 1 tsp dill weed
  • 12 oz loaf mini cocktail bread

1. In a small bowl, mix together the softened cream cheese, mayonnaise, ranch seasoning, and dill weed until smooth and well combined.

2. Wash and thinly slice the English cucumber.

3. Spread a layer of the cream cheese mixture onto one side of each slice of cocktail bread.

4. Add a few thin cucumber slices on top of the spread.

5. Top with another slice of bread if making them as full sandwiches, or leave open-faced if preferred.

  • Soften the cream cheese first. Let it sit at room temperature for about 20–30 minutes. This makes it much easier to mix and gives you a smooth spread without lumps.
  • Slice the cucumbers thin. Thin slices work best so the sandwiches stay soft and easy to bite. A sharp knife or vegetable chopper makes this step quicker.
  • Pat cucumbers dry. After slicing, gently pat them with a paper towel. This helps keep the bread from getting soggy.
  • For the freshest texture, assemble the sandwiches no more than a few hours before serving. If needed, you can make the cream cheese mixture a day ahead and store it in the fridge.
  • These sandwiches taste best served cold. Store them in an airtight container in the refrigerator until ready to serve.
  • Adjust the seasoning. Taste the spread before assembling. You can add a little extra dill for more herb flavor or a small pinch of salt if needed.
