Step-by-Step Guide
1. Preheat the oven to 350°F and lightly grease a 9×13 baking pan.
2. In a large bowl, combine the shredded chicken, cooked bacon, green onions, cream of chicken soup, sour cream, and Italian seasoning. Stir until well mixed.


3. Transfer the mixture to the prepared baking pan.

4. In a medium bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are coated evenly.


5. Sprinkle the cracker mixture over the top of the chicken.

6. Bake for 30 minutes, until the casserole is bubbling and the topping is golden brown.

7. Garnish with fresh green onions and serve.

Important Recipe Notes
- You can use rotisserie chicken or cook your own boneless, skinless chicken breasts or thighs.
- Any type of bacon works, but I don’t recommend pre-packaged bacon bits.
- Add some spice with cayenne, red pepper flakes, or jalapenos if you like a little kick.
- For a cheesier casserole, stir in shredded cheese with the chicken mixture.
- Herbs can be swapped with thyme, parsley, or oregano — fresh or dried.
- Crushing the crackers with some chunks left adds extra texture and crispiness.
- Serve with mashed potatoes, rice, or a side of veggies for a full meal.

- 8–10 slices cooked bacon chopped
- ¾ cup sliced green onions plus more for garnish
- 10.5 oz cream of chicken soup (2 cans)
- 8 oz sour cream
- 1 tsp Italian seasoning
- 2 full sleeves Ritz crackers crushed
- ½ cup 1 stick unsalted butter, melted
