Important Recipe Notes

  • Use a candy thermometer: Heat the butter and brown sugar mixture to 300°F for the right toffee consistency. Be careful, as the hot sugar mixture can cause burns.
  • Prepare the muffin tins ahead: Spray the muffin cups with nonstick cooking spray to help the candy bites release more easily.
  • Work quickly with the toffee: Spoon the hot mixture over the Ritz crackers right away before it begins to harden.
  • Let the chocolate melt: After adding the chopped chocolate, wait 4–5 minutes before spreading it evenly over the toffee.
  • Add toppings while the chocolate is soft: Sprinkle on the Christmas sprinkles, M&Ms, or toffee pieces before the chocolate sets.
  • Chill until firm: Refrigerate the candy bites for 1–2 hours so they are easier to remove from the muffin tins.
  • Remove carefully: Use the tip of a small, sharp knife to gently loosen each candy bite without breaking the cracker base.
  • Store properly: Keep the finished candy bites in an airtight container in the refrigerator until ready to serve.
