How to Make Christmas Ritz Cracker Toffee Bites
Ingredients you’ll need for this recipe

Step-by-Step Guide
1. Prepare the muffin tins. Preheat your oven to 400°F. Spray two muffin tins with nonstick cooking spray. If you only have one muffin tin, you can make the candy in two batches.
2. Add the crackers. Place one Ritz cracker into each muffin cup.

3. Make the toffee. Add the butter and brown sugar to a saucepan. Heat until the mixture boils, then continue boiling for 2–3 minutes, until it reaches 300°F on a candy thermometer.

4. Add the toffee mixture. Carefully spoon about 1 tablespoon of the hot toffee mixture over each cracker. Divide any extra mixture among the cups.

5. Bake the crackers. Place the muffin tins in the oven and bake for 4 minutes.
6. Add the chocolate. Remove the tins from the oven and sprinkle the chopped chocolate over the hot toffee. Let it sit for 4–5 minutes to melt, then spread the chocolate evenly over each candy bite.
7. Decorate the candies. Add toffee pieces, Christmas sprinkles, M&Ms, or your favorite toppings while the chocolate is still soft.

8. Cool and chill. Let the candies cool, then refrigerate for about 1–2 hours until firm.
9. Remove from the muffin tins. Carefully slide the tip of a small, sharp knife along one side of each candy to loosen it, then gently lift it out.
Serve & Enjoy!

Important Recipe Notes
- Use a candy thermometer: Heat the butter and brown sugar mixture to 300°F for the right toffee consistency. Be careful, as the hot sugar mixture can cause burns.
- Prepare the muffin tins ahead: Spray the muffin cups with nonstick cooking spray to help the candy bites release more easily.
- Work quickly with the toffee: Spoon the hot mixture over the Ritz crackers right away before it begins to harden.
- Let the chocolate melt: After adding the chopped chocolate, wait 4–5 minutes before spreading it evenly over the toffee.
- Add toppings while the chocolate is soft: Sprinkle on the Christmas sprinkles, M&Ms, or toffee pieces before the chocolate sets.
- Chill until firm: Refrigerate the candy bites for 1–2 hours so they are easier to remove from the muffin tins.
- Remove carefully: Use the tip of a small, sharp knife to gently loosen each candy bite without breaking the cracker base.
- Store properly: Keep the finished candy bites in an airtight container in the refrigerator until ready to serve.
