Step-by-Step Guide
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the egg and vanilla extract, mixing until well combined.

3. In another bowl, whisk together the flour, baking soda, salt, and ground cinnamon.

4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

5. In a small bowl, mix together the granulated sugar, brown sugar, and ground cinnamon.
6. Roll the dough into small balls (about 1 inch in diameter; use an ice scooper if you prefer) and then roll each ball in the cinnamon sugar mixture, ensuring they are well coated.

7. Place the coated dough balls on the prepared baking sheet about 2 inches apart. Bake in the preheated oven for about 10-12 minutes or until the edges are slightly golden.

8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

9. Serve the cookies warm or store them in an airtight container for later.
Serve & Enjoy!

Important Recipe Notes
- Use softened butter so it creams easily with the sugar and gives the cookies a smooth dough.
- Do not overmix the dough after adding the dry ingredients. Mix just until everything is combined.
- Roll each dough ball generously in the cinnamon sugar mixture for a sweet coating on every cookie.
- Keep about 2 inches of space between the cookies on the baking sheet because they will spread as they bake.
- The cookies may look soft when they first come out of the oven. Let them cool on the baking sheet for a few minutes before transferring them to a wire rack.
- For evenly sized cookies, use a small cookie scoop or measure about 1 inch of dough for each cookie.
- Store cooled cookies in an airtight container at room temperature for several days.
