Important Recipe Notes

  • Heat treat the flour: Don’t skip this step. Microwaving the flour helps make it safe to eat since this is a no-bake recipe. Let it cool before mixing it into the dough.
  • Use softened butter: Make sure your butter is soft (not melted) so it blends smoothly and gives that creamy cookie dough texture.
  • Melt chocolate slowly: Heat the chocolate in short intervals and stir often to avoid burning. Chocolate can seize quickly if overheated.
  • Work quickly with layers: Once the bottom chocolate layer is slightly set, spread the cookie dough gently so it doesn’t crack the chocolate.
  • Chill between steps: Giving each layer time to set in the freezer helps keep clean layers and makes cutting easier later.
  • For cleaner pieces, use a large sharp knife and press straight down instead of sawing.
  • Store in an airtight container in the fridge for up to 1 week, or freeze for longer storage. Let sit at room temperature for a few minutes before serving for the best texture.
  • You can mix in mini chocolate chips, sprinkles, or even crushed cookies into the dough layer for extra fun.
