Important Recipe Notes

  • Use a sharp knife or mandoline to get even slices. Thinner slices will cook through more evenly and make the casserole extra tender.
  • You can prep the layers earlier in the day, cover with foil, and store in the fridge until you’re ready to bake. Just add a few extra minutes of baking time.
  • Parmesan gives a nice salty bite, but you can also use mozzarella, Gruyère, or Swiss if you want it extra cheesy.
  • The dry onion soup mix is what gives this dish its deep flavor. If you don’t have it, you can use onion powder, garlic powder, and a pinch of beef bouillon as a substitute.
  • Allowing the casserole to sit for about 5 minutes before serving helps the sauce thicken up and makes it easier to cut.
  • Leftovers keep in the fridge for up to 3 days. Reheat in the oven or microwave until warm.
  • Assemble and freeze unbaked (wrapped tightly) for up to 2 months. Thaw in the fridge overnight, then bake as directed.
